What's the trim length for a 7mm Saum case?

2.025 for 2.035 max case length on a standard SAAMI chamber.
If the reamer used wasn't (apparently some are 2.05) I'd still just go 10thou shorter than max.

I would totally advise to get or make one of these Trev, then u will actually know what your chamber length is, instead of what it's 'supposed' to be.

They work well. I've got them for all my rifles where I don't have a reamer drawing. I know exactly my safe trim to lengths rather than the one size fits all SAAMI specs.

Made my last one myself. Spun it up on the lathe using brass.

Absolutely. Many shooters come unstuck with the 'simple' stuff like this and end up with cases too long, which then jam into the little 45deg bevel right at the very front of the chamber, which raises pressure. Or they can have cases too short, which then allows the dreaded (supposedly) carbon ring to form and cause issues.

As with loaded round diameter and the clearance needed in your chamber : I notice just recently a couple of shooters getting caught out with problems here. Ya GOTTA tick these boxes properly.
